A while back, I welcomed you into my kitchen, and had a survey to see if you all would be interested in seeing some vegetarian and vegan recipes here on Brighter Sides! The response was overwhelmingly positive, so I’m happy to share my first recipe post from my tiny kitchen!
Every fall, it seems like pumpkin everything is all the rage. I’ve got nothing against pumpkins, but there so many other wonderful fruits and vegetables in season that we can enjoy right now! One of my favorites is the pomegranate. Not only are these beautiful crimson fruits a delicious sweet-tart snack, they’re also packed with antioxidants, so they’re great to keep you healthy as the cold weather sets in.
This recipe combines the full flavor of pomegranate juice with the refreshing effervescence of Canada Dry Sparkling Seltzer Water. This drink uses all natural ingredients and there is no added sugar, so it’s much healthier (and tastier!) than traditional soda. It’s quick and simple to make, whether you’re whipping up a glass to enjoy with your lunch, or mixing up a whole punch bowl to serve at your next party. It’s the perfect fall treat for all ages!
I chose to use Canada Dry Sparkling Seltzer Water in Lemon Lime flavor to compliment the lime juice we’ll be adding to tart it up a little more. I think it’s the perfect addition to this recipe. It’s available at QFC in the soda aisle – you’ll find 12-packs near the mixers. See the picture at the end of the post for a visual!
You can either grab a whole pomegranate and cut it open to harvest the arils, or you can buy a package of fresh arils, in the refrigerated produce area at QFC, near the berries. You can also save time (and your hand muscles) by using a bottle of lime juice to use in the drink, and just use the fresh lime as a garnish. If you’re making large quantities, I definitely recommend going the easy route with bottled lime juice and pre-packaged arils, but the choice is yours! I’ve been mixing up a glass here and there as a fizzy afternoon pick-me-up, and snacking on a handful of pomegranate arils. It’s a quick and easy, and it looks so fancy! What’s your favorite fall treat?

- Canada Dry Sparkling Seltzer Water, Lemon Lime Flavor
- 100% Pomegranate Juice
- Pomegranate OR Fresh Packaged Pomegranate Arils
- Add 3-4 ice cubes to a glass, and then fill halfway with Pomegranate juice.
- Pour Canada Dry Sparkling Seltzer Water almost to the top of the glass.
- Add a hearty squeeze of lime juice, to taste (more lime = more tart!).
- Finish with several fresh Pomegranate Arils and a slice of lime.
- Cute straw optional :)
